Chili Non Carne

By way of introduction

Brand new addition to the family of recipes, a stunning debut if I may say so myself, born out of a chance encounter between discounted fake mince and promotional sweet potatoes, a love story for the times ;)

Ingredients

  • 2 sweet potatoes
  • 400g fake mince (in the UK I can recommend meatless farm, top notch; or you can go for actual mince but don't be surprised if you get Chili Con Carne)
  • 2 onions
  • 3 - 4 bell peppers (green ideally, but any will do)
  • 2 cans / 400g tinned beans (red, but again, any will do)
  • 2 cans / 800g approx chopped tomatoes
  • 2 tea spoons cinnamon (yes, I know, weird - trust me)
  • 2 tea spoons ground cumin
  • 1 tea spoon smoked paprika (or more if you want to go redneck BBQ)
  • 1 - 2 cloves garlic
  • 2 - 4 chili peppers 
  • some heavy dollops Worcestershire sauce
  • bunch fresh coriander to serve 
  • salt
  • pepper
  • olive oil
  • water if gets too dry in cooking

What to do

Very little philosophy to it ;) although feel free to pepper in some sage. (this is just a pun or a Play on Words, as cpt. Carrot would explain it, no actual sage or Sage is required) 

  1. Chop onion, fry in olive oil till translucent (at the bottom of a fairly big pot), 
  2. Add all the seasoning 
  3. And chopped sweet potatoes, saute with the onion for a few minutes (3-4?) (also, mind there's enough oil, the whole thing is fairly big so you can be generous at this stage)
  4. Add mince and saute for a few minutes (3-4? or if actual meat, till browns a bit)
  5. And then just dump in the rest of ingredients and bring to a bubbling boil 
  6. Lower the heat and cook for some 20 mins or until sweet potato is soft / cooked (mind, with actual meat you better make it closer to 40 minutes!)
